Recipe – Camp 5 My Favorite Summer PastaBoil whole wheat pasta (whole wheat pasta with added protein is even better) Slice 1 zucchini and 1 yellow summer squash. Sautee zucchini and squash in a pan sprayed with non-stick cooking spray. While vegetables are in pan sprinkle Italian Seasoning over them. (Season to taste, can also add more when tossed with pasta) Once everything is cooked combine the pasta and vegetables, toss with a tablespoon of olive oil and serve. You will not need any added salt since the Italian Seasoning has a fairly strong taste. For added protein you can mix in chopped grilled chicken breast or tofu. Remember to only eat one serving of pasta but eat all of the veggies!! This makes a great lunch to pack for work, quick dinner or served as a side dish at a summer get together. Carb Point: It is a good idea to include higher carbohydrate options like pasta and rice in your diet only once or twice a week. The rest of the week, choose from lighter carb options such as Akmak crackers or light whole grain bread. |
